When most people think of plant-based diets, they imagine that their taste buds have to suffer. In fact, there are ways to transition to a plant-based diet and actually enjoy the foods. This week, I decided to try the Silk #MeatlessMondayNights Challenge. I did this for a few reasons: first to show others that you can still enjoy lots of delicious tasty foods without using meat or dairy products and second, to challenge myself to try something new. I am a fitness coach and a bodybuilder so I need to eat a variety of foods to fuel my muscles and get the energy I need to make it through my day. I normally use Silk Almond Milk to make my protein shakes and smoothies on a daily basis. But while at the grocery store, I decided to buy the peach & mango flavored dairy-free yogurt and it tasted amazing! I didn’t expect it to taste as close to regular Greek yogurt as it did.
I also went on the Silk website and found many delicious recipes. I enjoy eating spring rolls but they usually have chicken or shrimp, so I was interested in taking this challenge in a new direction. Rather than just make shakes and smoothies, I found a meatless spring roll recipe that used the coconut milk to make the dipping sauce. It was super easy to make and tasted just as good as the ones made at the restaurants. I also use the coconut almond milk in my morning oatmeal and love it better than cooking it in water or full-fat whole milk. I actually feel better cutting dairy out because too much of it can cause some inflammation.
So now you know, a plant-based diet is actually pretty good and there are many different ways to enjoy the foods. There are tons of recipes to try here from smoothies, to pancakes, and even black-bean chili!
